Chef's Restaurant National security in Périgueux? It's in Cyril Haberland's home, happy and fulfilled in this comfortable house on the threshold of the old quarter. Whether on business or pleasure, connoisseurs flock here. They know they're going to find a product, a chef, and the reassuring sensation of being in the hands of a pro. And frankly, they never regret the hundred or so euros (evening menus are €65 and €87) invested to spend the best evening of the month. The former chef of Les Reynats, who has played with pots and pans enough to know exactly what he wants today, distills a chiseled menu to perfection, with excellent foie gras (which could almost do without beet), scallops from Port en Bessin with Jerusalem artichokes, lemon chorizo condiment and barb juice emulsion, and a well-thought-out chocolate truffle dessert, featuring a remarkable truffle sorbet that's tasty and not too sweet. A cellar of good friends of prestige (Foreau, Agrappart, Rayas...) and connoisseurs from all regions, with no real revelation but solid enough throughout, Anne Haberland's softly hushed welcome. We learn on the chef's social networks that he has decided to sell his restaurant in September 2024, with last service on the 28th.
