Chef's Restaurant An offer like nowhere else, transporting you from the Haute Tarentaise to Machu Picchu in the warm and mysterious surroundings of the Chogori. Once again, the talent and rigor of Jean-Alain Baccon's teams have proved an undeniable success. Peruvian food in Val d'Isère is just as comforting as fondue or raclette: this festive moment is accompanied by plates, bowls and wooden bowls filled with magic, in which every dosage, every cooking and every seasoning is meticulously prepared: soft baos with shrimp and lamb, a delicious langoustine roll, the classic ceviche leche de tigre aji amarillo or the mellow causa with crab and potato pulp to open the proceedings. Then it's on to the brothy pollack and crayfish, spiced up just right, octopus with sea urchin tongues and tagetes bearnaise or marinated cockerel, before the equally refined desserts, lime cucumber aloe vera mousse and pisco or a chocolate coffee diablerie that takes you for the count. The all-you-can-eat menu costs €160 and is well worth it. Remarkable service, precise and clear, with a natural touch, a rich cellar locally and around the world.
