Gourmet Restaurant A trattoria on the slopes? That's Luc Reversade's new challenge in his Las Vegas in the Tarentaise region, at an altitude of 2400 m, called La Folie Douce. But instead of piling on concepts and ambiences, each restaurant here has been thought out, worked on and given a real identity. La Cucucina's décor is worthy of a peplum. The plaster sculptures and busts give the impression of entering an artist's studio. The waiters wear painter's jackets, and the smiles follow one another in general good humor. To start, a vitello tonnato and a beef carpaccio, both gourmet and well-prepared. The little artichokes, fried Roman-style, are finger-licking wonders. And if you want to keep your strength up before skiing, the carbonara is perfect! Directly inspired by chef Denny Imbroisi, the pasta is served here as a bird's nest with two generous slices of guanciale and an egg yolk on top. Desserts are classic and not necessarily very light: panna cotta, tiramisu and magnificent profiteroles "della cucucina". The Italian wine list is a little timid compared with the 400 references on offer at La Fruitière, the restaurant's other address.
