Gourmet Restaurant On the slopes of Val-d'Isère, in the discreet combe du Fornet, amidst larch and arolla pines, a blue trail leads you to the foot of a local stone building, enhanced by blond woods. Maxime Bonnevie occupies the lower level of the Edelweiss restaurant, which has been a favorite of Avalins guests for the past twenty years. This tall, bearded fellow in his thirties is a local boy who never forgets where he comes from. René is the name of his grandfather, an exceptional skier who - it seems - appreciated good things. The kitchen is open plan, with the Mibrasa oven almost in the middle of the room. Meat and fish are cooked with precision, while bottle after bottle is opened. A "bistro cuisine" atmosphere that loses a little of its vigor outside the dishes. Starters and desserts could be inspired by the guidelines of the dishes chosen here, raw and well done.
