Remarkable Restaurant At the foot of the famous Bellevarde, one of the world's most renowned ski slopes, Les Barmes de l'Ours offers a spectacle as athletic as it is natural, a raw, almost carnal "face to face". Antoine Gras loves the soul of this place, and like a tightrope walker, he has developed an elegant, refined cuisine here. He plays with contrasts, as with this oyster stewed with cabbage and caviar, or this crozet pastry, worked like a lasagne leaf by leaf, with oxalis mushrooms and a delicious sabayon with old beaufort. He plays with colors: his sauces are as beautiful as they are long in the mouth: Lake Geneva perch meets a very pretty mondeuse, turbot from a small boat finds a new home for the occasion, Chambéry and its old vermouths. Of course, his creations reach their apotheosis with the chevreuil de chasse, a lovely baked carrot with fir tree aromas. The milk-fed veal is certainly tender, and of fine quality, but the onion, forgotten for hours, could have been enhanced by the vegetables. For dessert, we'd be tempted by these vanilla (plural) buckwheat and juniper from here, or by this chocolate, mulled wine and oatmeal glaze. Unless you'd like to rediscover this all-white dessert, made with Villaroger milks, mountain caraway and a candied hen yolk, like a caramel. The wine list is as impressive as the immense mountains, with the sommelier proposing pretty pairings according to her desires and yours.
