Remarkable Restaurant Needless to say, Jean-Yves Schillinger is something of a king of the town, so well established today on the Champ de Mars. This hushed, refined interior is ideal for intimate meals and large contracts alike. The chef is indeed the master on board, and the only one in town able to charge such gleaming additions. And for dishes that are likewise second to none. The magnificent tapas platter that brings together all the starters on the menu (caviar tartare, tuna tataki, sea bream gravlax...) is a fine moment of conviviality, the Breton lobster in a Cona coffee pot and two courses is a spectacle, the sweetbread in a potato crust with a lemongrass ginger jus shows superior technique, before the brilliant desserts, chocolate grué pepper ice cream or poached rhubarb hibiscus mascarpone cream. Cellar with many great bottles, including a first-rate selection from Alsace.
