On the first floor of the Italian gastro (Finestra), this chic trattoria is more than a preamble. Products are worthy of the house, well used and highlighted, and classic recipes, such as beef carpaccio topped with a tonnato sauce, find a pleasant switch without being revolutionary. Impeccable cacio e pepe with a veil of shrimp carpaccio, beautifully cooked lean meat with a creamy marine sauce, and a rather personal tiramisu for a skillful sequence, logically rather expensive, supported by an Italian-Corsican cellar that lacks small choices for this level. Very attentive service, with a motivated young sommelier.
