Chef's Restaurant This large, sheltered terrace overlooking the harbor below the citadel is the resort's most exclusive. The menu features locally caught fish and southern-style dishes inspired by Corsica and Italy, such as mozzarella arancini with lemon cream, followed by bouillabaisse (langoustine, sea bream, sea bass, pike-perch, etc.) with a rouille emulsion and a strawberry-basil-olive-oil dessert. The location, the care taken with the dishes and the attentive, attentive service, in keeping with the restaurant's high standards, mean that we can keep our 2 toques.
