The table is as discreet on the outside as it is brilliant on the inside, thanks to the ever playful creativity of Sophie Reigner and Julien Noray. Here, Sophie Reigner creates an iodized cuisine with a real personality, inspired compositions and a rare technique, varying tastes and influences according to the season and the mood, knowing how to propose balanced ideas, between complexity and obviousness. The upstream work results in a sensation full of harmony, like the raw scallops, poultry jus marbled with a passion fruit coulis and wasabi chlorophyll, the fine work on cuttlefish and cuttlefish stew, a version of a spicy American sauce, or the Challans duck breast in two ways, butternut millefeuille, duck jus with coffee and sea urchin. Julien Noray's pastries are of the highest calibre: a drop of iodine, milk jam, pear, hay and wakame, a pompona vanilla bean, citron, hazelnut and candied royal kombu. The dressings are as memorable as ever. Well-informed cellar (domaine Paquet, domaine Jasmin, Michel Girard, domaine Genot-Boulanger...).
