Sponsored Emblematic of the Hossegorian style typical of the seaside resort of the same name, the Hôtel du Parc has offered two restaurants (La Belle Époque and La Rotonde) since its reopening in 2021. La Rotonde, a gourmet restaurant, has quickly established itself as one of the finest in the region. In a superb semicircular dining room, opened by large glass windows onto the Hossegor marine lake, you can enjoy a cuisine where dehydrated and defrosted food are outlawed. The port of Capbreton and the Saint-Jean-de-Luz fish market are particularly well-suited to this cuisine, where seafood has pride of place, such as semi-cooked swordfish with barbecued leeks, carrot tops and fennel shoots, enhanced by an emulsion and lemon gel. The land side is just as creative, with a savory beef marrow bone, homemade pommes dauphines and aged cheddar, combined with the exotic flavors of malabar pepper and nori seaweed. A cuisine truly worth discovering.
