A prime location, a simple and inviting dining room that flows onto its terrace, and the excellent work of Gabriel Gras Fernandez and Jorice Serdain in bringing this place to life in a unique way. In particular, the menu features distinctive Basque Country-inspired specialties, such as txistorra with Espelette pepper and lovage seasoning, Pyrenean trout with artichokes in a jalapeño and buttermilk sauce, farm-raised veal with endive, peas, and a seasoning of onion and savory, served with a creamy veal jus, and finishing with a delicious lemon vacherin.
