Chef's Restaurant At Fichon, we pride ourselves on having invented the fish cellar. It's hard to verify such a claim, but after all, who cares? We really like the concept, with a wide and relevant choice of fish in the cellar, and plates that don't play make-believe, relying on the freshest products, prepared in the form of tapas or more conventional dishes. At lunchtime, we keep things simple (2 starters, 2 main courses and a dessert, changed daily), and in the evening, the filets bring out some fine specimens: tuna tartare with raspberries, red beet, red cabbage and herring roe, pollack with pak choï cabbage, radish and horseradish mayonnaise...
