Gourmet Restaurant An iconic address in the capital, the famous restaurant founded in 1880 and home of the Goncourt family is as much a meeting place for literati as it is for fine French cuisine by Romain Van Thienen. Having worked with Yannick Alléno and Cyril Lignac, the chef revisits traditional dishes with great intuition, including leek vinaigrette with nori seaweed, green bean salad with pistachio oil vinaigrette and fresh apricots, pasta with chanterelles and candied egg yolk, classic roast Landes poultry with poultry jus, vol-au-vent with albufera sauce and saint-honoré with salted butter caramel sauce. Well-stocked cellar.
