A new Daimant has taken its place on the market, following on from the Absinthe des Rostang. Alice Tuyet has set up a new unit to the glory of plants, with a mouth-watering menu full of inventive ideas: roasted cauliflower, béchamel and "secret sauce", braising zucchini with white miso and maple syrup herb yoghurt, eggplant à la flamme with zaatar oil and apricot sauce, and "iconic" dishes such as pasta re-fried in the previous day's dish ("casarecce des grillades de la veille"). Weekend brunch, daily lunch menu at €29. And it's open from midday to midnight every day.
