Gourmet Restaurant Not far from Châlons en Champagne, this magnificent listed château is home to a 4-star hotel and a restaurant designed by Anthony Thibault (Jeune Talent 2012). In this exceptional setting, where history has pride of place, the chef combines tradition with noble products to create top-notch dishes for an enthusiastic clientele. The Découverte menu is a good introduction, with its small rabbit pie with lemon confit, pine nuts and savory, roasted cod back, melting camus artichoke and sautéed peppers, filet mignon of pork in spicy medallions, carrots and sesame, hazelnut tartlet and lime cream, redcurrant confit and bergamot sorbet. Good cellar selection. Attentive staff.
