Another success for Matthieu Desmarest with this wine bistro annex to his three-toque Pollen. Here, the menus are turned upside down and the dishes published, a godsend for finding a very correct level of cuisine on dishes of the moment, well felt, well tasted. If the first formulas don't make you dream, the €50 Garance menu offers good sensations, with beef kefta with mint, peach of the day with celery cream and lemon grass sauce, and pink pavlova with lychee and lime. An attractive menu of nibbles for the evening, and a well-organized and interesting wine cellar.
