Gourmet Restaurant All the signs are green for Mathieu Desmarest and his teams, both at the gastro and at this lively venue on Rue Vernet. With a well-targeted offer, a beautiful place with historic charm and, above all, professionalism and a certain seduction in the plates, in the honesty and taste: cod carpaccio skrei kumquats fresh herbs and crunchy vegetables, braised chuck of beef onions and carrots glazed with celery purée juice, vanilla caramel fleur de sel pecan nut sweetness in an adapted formula at €39 (another at €50 for special evenings with nobler products). Efficient service, good regional wine cellar with good advice. And a wide choice of nibbles from 6pm to 10pm.
