Gault&Millau's review 2026

In this old bistro setting, with mirrors, burgundy banquettes and old chandeliers, the chef pursues Alain Ducasse's Lyonnais vocation in a bouchon version. Not quite authentic, but full of good will and refined in detail on standards that can still be perfected: pike quenelle with crayfish in Nantua sauce, large Burgundy snails, andouillette with veal strawberry from Bobosse's, mustard cream, black pudding, cooked and raw apples, veal liver, pommes grenailles, vinegar juice. Before the desserts, let yourself be tempted by a Saint-Marcellin from Mère Richard and, to finish, a floating island with pink pralines or Alain Chapel's petit pot de thé au jasmin. Wines by the glass and Lyonnais pots, but also a decent Beaujolais list.
