Chef's Restaurant Lise Deveix, winner of the Dotation Gault&Millau, doesn't have it easy in this corner of the world where the competition is weak, but where it's not so easy to raise the bar. This year's experiments seemed to us to have reached a plateau, even if the chef's talent is not in question, making the most of this location on a cobbled pedestrian street, with the cheerful decor of this small square room overlooking the kitchen. Correctly priced, the menus are well staggered for a sequence attracted by vegetal dishes: carrot pastilla, mousse and diced carrots between filo leaves and a quenelle of homemade harissa, pollack and roasted peanut Jerusalem artichoke emulsion, ravioles of Landes poultry (a little dry) married with chard, before a pleasantly light lemon tart. Simple service and an organic wine list with winemakers we like.
