Gourmet Restaurant It's an example of its kind, where traditions mingle with new winds to offer new perspectives. Behind the stoves are chefs Pierre Rieder and Maxime Merienne, committed to designing a modern bistro, where old furniture takes on new colors. Whether you go for the slate or the evening menu, the promises are well kept: chicken thigh lacquered with teriyaki, onigiri, rice tuile, pickled cucumber, ssamjang mayonnaise and chives, a slab of pike-perch, pea purée, sucrine tombée, beurre blanc with satay, chili jam and green oil, a quail confit, caramelized onion tartlet, curried cabbage salad, apricot vadouvan condiment and jus, hazelnut financier, poached rhubarb, strawberry balsamic coulis, fennel meringue and vanilla crème montée.
