Le Petit-Pressigny may not be lost in the mountains, but getting to this village nestled in the north of the Brenne Regional Nature Park requires an efficient GPS and a good dose of attention, especially after dark. But the reward is at the end of the road, in this venerable family home, brought to the top by Jacky Dallais and now run by his son Fabrice and his wife Isabelle. Deeply inspired by the classical repertoire, the cuisine of the man who had the good fortune to be trained by Pierre Gagnaire (and who is now supported by his son Clément) is astonishingly modern, opening the hostilities with a marriage of crab, celery and Aquitaine caviar, treating the toothfish with infinite delicacy and gourmandise, successfully rejuvenating the pigeon (absolutely magnificent with a purée that would undoubtedly have made Robuchon jealous) and hitting the nail on the head with an absolutely addictive millefeuille minute. As for Xavier Fortin, he oversees one of the finest cellars in France, and is capable of satisfying all tastes with confounding casualness and tact.
