Remarkable Restaurant The House of Happiness lies deep in rural Touraine, sloping down to the Poitou region. The Dallais family, from father to son, have turned it into an institution with a legendary cellar, whose assets are carefully maintained. The cuisine, too, is a bulwark against fashionable trends, without being rigid. It adapts its traditional style beautifully, with the chef demonstrating great technical accuracy in cooking, sauces and accompaniments, on an oyster in artichoke purée and mertensia jelly, crispy crab with bread and oyster juice emulsion, reconstituted claw with thyme butter, cauliflower cream and lobster oil, as on the rack of pork with mustard butter and spring onions, salsify purée and homemade black pudding. Less spectacular, the mandarin baba with milk and tea ice cream is nonetheless a pleasure. Xavier Fortin's cellar is stunning, with rare prices and impeccable, professional service.
