From the very first bite, the tone is set: precision of cooking, aromatic depth, and a keen sense of balance between the vegetable and the main product. The remarkably textured scallops are paired with leek and a delicate beard sauce, while the oysters, combined with Jerusalem artichoke and coffee, reveal an unexpected complexity, magnified by a chenin pairing of exemplary precision. The dishes confirm this very high level, like the duck worked in its entirety, where each piece expresses a different facet of the product, between smokiness, controlled fat and structuring bitterness. The long, persistent sauces are the hallmark of a cuisine of taste and conviction. In the dining room, Océane Dumont orchestrates service with precision and naturalness, supported by a young, committed team, far removed from the rigid codes of some distinguished restaurants.
