Chef's Restaurant Gaëtan Evrard cultivates a form of mystery around a studied and seductive discourse, in this carefully renovated former townhouse, with its chic, uncluttered salons. The Carte Blanche menu (for the chef, of course, not the customer) prevails. Nevertheless, we appreciate the mastery of the cuisine, with its beautiful seasonal combinations and, above all, its first-rate produce. The level of dishes is heterogeneous, but some stand out, like the grilled mackerel, served on a steaming stone with a rosemary scent, accompanied by a declension of beets, puréed and pickled, cleverly enhanced with fine strips of bottarga, and finally coated with a hibiscus vinaigrette. Also noteworthy are the beautiful desserts designed by pastry chef Rémi Brement. The wine list is not provided at the start of the meal, but sommelier Lucas Guimon will be happy to advise you on Loire wines, of course, but not only.
