Gourmet Restaurant Yet another evolution for this pedestrian institution. Arnaud Pignier, who has been in charge for just over a year, is changing gear to simply offer a table of its time, with no particular theme, sailing with a certain savoir-faire on the waves of current events and the seasons: perfect egg mousseline of arugula, grilled fillet of whiting mousseline of broccoli with lime, citrus vacherin with lemon thyme and blood orange in an all-course menu at €39, reserving some nobler ingredients in the superior formula at €55.
