Gourmet Restaurant Not far from Royan, a beautiful tide mill has been converted into a hotel-restaurant that combines the pleasure of gourmet cuisine with the charm of an atypical setting in the midst of bucolic nature. Chef Maxime Yoncourt works with the seasons in a contemporary and fairly classic vein, with just the right amount of technique to hold his own. The menu features tuna tataki marinated in Basquaise, Iberian chorizo, basil pesto and spinach; sturgeon steak, boulghour risotto, curry foam and bottarga; duck filet lacquered with beet, black garlic flan and grape mustard; nectarine nage with Timut pepper, Breton shortbread and peach mint sorbet.
