Chef's Restaurant Like the crystalline balances of reed beds, chef Florian Puglia and Julie Vedrenne wanted to pay homage to the fundamental nature of biospheres, whose demands and harmony are its primary beauty. Their table follows the same orderly path, insisting on respect for the seasons, good provenance and sustainability, favoring plants and offering beautiful symbioses on the plate, signs of a new way of cooking. The ideas are minimalist, yet technically sophisticated (the chef has worked at the Saint-James and Rabanel restaurants), such as a starter with fennel and tarragon, a combination of eggplant and watermelon, trout with shellfish and green beans, rabbit, potatoes and hay, or a dessert of lavender and verjuice. In the dining room and cellar, Julie displays her sense of hospitality and expertise, offering over two hundred and fifty references, mainly biodynamic.
