Chef's Restaurant Chef Xavier Taffart works his plates like a painter with his palette, imagining both the play of the senses and the work of colors, as if to remind us that we eat first with our eyes. This taste for aesthetics is a constant for Aurélie and Xavier, who have imagined an ultra-contemporary setting, where you can appreciate the purity and the view of the surroundings, and where contrasts enhance the chef's compositions. He's always in the spirit of travel, combining terroirs as the mood takes him: spider crab from Saint-Malo, mango, amanatsu and voatsiperifery pepper; lean fish snacked with elderflower in beurre blanc, smoked pike roe; quail from Challans like a paella; or meringue with strawberry old boy jam and white asparagus ice cream. Formulas range from €65 to €145.
