Chef's Restaurant An exceptional place also requires exceptional cuisine, imagined by chef Benoît Potdevin, who knows how to thank customers for their presence, by serving them noble heritage products with all the rigor indicated. A splendid 5* Relais & Châteaux, the Domaine de la Klauss is undeniably one of the finest hotels in the region, and also a stopover for gourmets, who can discover the Expression menu at €115. The menu includes cucumber petals, creamy "fensh'ta" feta cheese and Espelette pepper condiment, soft-cooked Arctic char, elderberry-flavored celery and a light hollandaise sauce flavored with burnt lemons, a sheet of slow-cooked French veal loin, zucchini pulp, zucchini flower stuffed with chanterelles and 24-hour veal chuck confit, full-bodied jus, red plums au naturel, vanilla cream infused with toasted brioche, plum sorbet and plum extract.
