Remarkable Restaurant It's already been a year since Quy Phi and Guillaume Foucault embarked on a new adventure, leaving the Pertica in Vendôme to make us dream in this incredible place in Chaumont-sur-Loire. The setting is a match for the chef's ambitions, showcasing dishes with a savory commitment and refined aesthetic. For starters, Loire Basin shrimp, white dandelion, almond and fig leaf: quality local produce, a subtle blend of textures and temperatures, and a surprisingly harmonious combination of flavors. This approach continues throughout the meal, with a fine Percheronne (a local breed of cow), quince, leek and pig plum; or for dessert, Carésy pear, chard, hazelnut and black lemon. In the dining room, the experience is just as pleasant, with a special mention for Quy Phi, the chef's wife, who knows how to put us at ease and give us details on the menu, which she knows inside out. She also gives us invaluable advice on the wines, drawn from a deliberately locally-oriented menu, mixing well-known estates with new discoveries.
