Chef's Restaurant as the Prince of Salina said, "Everything has to change for nothing to change", and on the banks of a Loire that is never the same, chef Christophe Cosme is evolving to stay the same. It's an old half-timbered house that breathes new air, after a renovation in 2020 that gave it more contemporary colors and a more refined decor. Plates travel the length of the Loire with confidence, recipes mastered and familiar, of a good height, a rich marbré of duck foie gras with regional truffles and gingerbread, navette of bread pudding and honey, a ballotine of pike-perch stuffed with langoustines cooked at low temperature, melting and comforting, with a tatin of shallots and lacquered turnips, a chocolate palet, brioche perdue, fermented ribot milk ice cream and roasted hazelnut mousse. Very classic cellar, with appellations from all over France. Menus from €29 to €69.
