Chef's Restaurant Just a stone's throw from Amboise, Château de Pray clearly demonstrates its gastronomic ambitions, promoting the region in a charming Renaissance-style residence. Chef Arnaud Philippon works with quality ingredients, paying careful attention to the balance of textures and temperatures. The butternut squash seed shortbread with house-cured ham seemed a little timid, but picking from the menu, the French game fawn, Touraine blueberry, red cabbage and cocoa made a good impression, as did the dessert of Saint Genouph citrus, Touraine saffron and chestnut. A fine wine list accompanies all this, with Touraine well represented, especially by the glass.
