Remarkable Restaurant A local institution since 1989, L'Aubinière has evolved over the years into a house of character, integrating hotel spa and gourmet dining. At the helm, Odile and Jacques Arrayet create a precise and generous four-handed score. After walking along the glassed-in cellar, a veritable showcase for the great wines of the Loire Valley, the hostess leads us into a luminous, flower-filled dining room, where every detail seems to have been carefully considered. A glass of Vouvray as a welcome, cabbage with Orléans mustard to whet the appetite: the tone is set. For starters, Mouliherne snails cohabit with melting rillons, all bathed in a lively, herbaceous broth of remarkable balance. This is followed by a sea bass with pearly flesh, accompanied by al dente linguine and a dense, almost carnal green pesto, whose umami notes prolong the gourmet experience. For dessert, the house pays tribute to seasonal fruits. For spring, peach and apricot are combined in a fresh, elegant cake-sorbet, surrounded by tart red fruits and aniseed herbs. A light composition to conclude a moment of harmony.
