Remarkable Restaurant Clément Leroy is back in Guy Savoy's stronghold, and everything has changed! He has been at the helm of Le Chiberta since May, and the situation has been put right, with the minor shortcomings noted at the start of the year, both in the dining room and on the plate, erased as if by magic. So it's with the greatest pleasure that we return to this chic salon close to the Etoile, as we loved it when our Academician was closely involved, and which today constitutes a choice setting for the chef from the Drôme region. You'll appreciate the parallel between the hushed atmosphere of the rooms, whose walls lend themselves to the display of fine wines, and the finesse of the plates. In both cases, however, fantasy makes an appearance: modern, colorful paintings contrast with the black of the walls, and on the plate, flavors such as orange blossom or shiso break with the codes of tomato and mozzarella. Beyond this creativity, the work on textures and presentation is remarkable. For example, "La couleur des tomates anciennes" features tomatoes in jelly, tartar or powder on fried shiso leaves in a highly successful visual. A new signature dish, "Sweetbreads au sautoir, cuttlefish and pil-pil", is a round, chili-spiked, earthy-sea dish, and a tribute to the Drôme region with boletus ravioli. The wine list is at the expected level, mixing prestigious labels with affordable bottles, and service is once again impeccable.
