In addition to its history, the restaurant's exceptional asset is its rock face and glass roof, providing a unique setting in which the kitchens work faithfully. Le Chapon Fin has a long history, which goes hand in hand with that of Bordeaux's restaurant scene. In spite of this, and because of our attachment to this local emblem, we can't keep the two toques this year in a sequence (green asparagus with red tuna marrow and "completely siphoned" béarnaise, lamb in a modern gomasio jardinière with pine juice, strawberries with melilot and dill...) that reveals good-quality products, but chiche plates, which this year lack the right seasonings and combinations. Of course, we'd like to believe that we'll be able to return to the expected level as soon as possible, because we and the people of Bordeaux are confident that we will.
