This could be the gastro of tomorrow. A superb wine list created by the chef, his sommelier, and the wine merchant next door who shares his fine allocations; a cuisine of emotion supported by solid technique and impeccable products, without ever being obsequious or overly demonstrative of its talents; and a light, elegant and warm atmosphere, carried by the chef who looks after everyone with patience and dedication. Alexandre Baumard, free from the constraints of the palace and the group, works for his customers and friends, and according to his own wishes. Everything is done sincerely, with a professional heart, for the pleasure of the customer, and it works furiously well. Langoustine radish sabayon citron noir: a super-fresh langoustine, tender, not overcooked, full of the taste of the sea, delicately underscored by the herring purée, with the tongs to dip in the irresistible mayo siphon. Bar endives velours de cress: fish confit without being denatured, soy just to push the cursors, and make a subtle link with the watercress, the tatin of endives is perfect, melting, with a slight bitterness, not very sweet but balanced; everything is linked without smothering the taste of each, it's a feat of accuracy on all levels. Then there's the green asparagus and shellfish marinière: a fish roasted on seaweed, nicely peppered with a sauce "learned from Bocuse some fifteen years ago and a little lighter", confides the chef. Then, the marvelous off-menu morel mushrooms, a rare pleasure with a completely addictive poultry and morel cream, before the chocolate vanille brûlée mucilage, which features the associate pastry chef in the final scene. Attentive and respectful service, full of solicitude for a rare moment that simply makes you want to say thank you.
