Rue Lafaurie de Monbadon, Nama's discreet façade doesn't shout out, it calls out. Behind it, a hushed dining room with dark walls and woven paper fans sets the scene for an assertive Franco-Japanese cuisine, served on an omakase menu: the chef decides, the guest discovers. Six courses follow one another with conviction. The raviole with squid ink and mushrooms, coated in a hazelnut butter with lemon zest, opens the ball with elegance. The saithe with yuzu beurre blanc confirms the mastery of balance, before a ballotine of poultry with miso and pea-wasabi cream that fully embraces fusion. The desserts, light and inventive, pineapple-wakame sorbet, meringue and sake siphon conclude the journey with grace. The beverage pairings intelligently extend the experience: carefully selected wines, Japanese sakes offered in harmony with the dishes, an invitation to explore beyond the usual glass.
