Remarkable Restaurant The unchanging 17thᵉ century Provençal bastide in the Grasse countryside has served as a showcase for chef Jacques Chibois for thirty years. Like a friend, it bears witness day after day to the culinary prowess of the master of the house. The cuisine of the sun is his, as is the Mediterranean in the plate. And while Michel Guérard's former fellow traveler has surrounded himself with chefs who bring a different perspective to today's cuisine, such as Jean-François Marre and M.O.F. chef Jean-Luc L'Hourre, straight from his native Brittany, he has lost none of his gourmet flair, and it's a cuisine sometimes made with six hands that arrives at the table. His dishes include artichoke poivrade on a foie gras velouté with fleur de sel brioche, and pan-fried fillet of pike-perch with melting Paimpol cocos, cooked with shellfish juice, foam and smoked bacon powder, with a meat juice to accentuate the land-sea aspect. In the Sensation menu at €96, the cheese platter is one of the main courses, and the choice is difficult among the thirty or so varieties on offer. The goats of Monsieur Monteiro in Peymeinade will not leave you indifferent, but neither will a farmhouse Saint-Nectaire. The desserts are refreshing; if the vanilla-poached burlat cherry rubs up against the verbena ice cream, the white peach is accompanied by its very Italian amaretto creaminess. The cellar, with its 1,000 references (including 400 in the cellar book) and some 25,000 bottles, is another delight. As for service, it's that of a fine establishment, attentive from start to finish. Needless to say, we'd be delighted if this fourth toque were to return soon.
