Chef : 1 restaurantThe son of farmers and millers, the Périgord-born chef naturally turned to agricultural studies, which he soon abandoned. At the age of 19, after a year's apprenticeship in a renowned restaurant in Limoges, the man who was to become his mentor was waiting for him in Paris: Michel Guérard, whom he describes as "the chance of a lifetime" and whom he would follow everywhere. From the legendary Pot-au-feu d'Asnières to Chez Régine, via Michel Guérard's TV show, "La Cuisine Légère". But at the age of 26, Jacques Chibois cut the cord and left Paris for a region he would never leave. In Cannes, he took the reins at Gray d'Albion, his first great success. "That's where I learned how to run a business", he says, before finally finding "his" home. Or rather their home. With his wife Odette, they settled in Grasse, in this magnificent 18th-century bastide. But there was no question of rushing things, and the move was gradual. From 75 covers at the time to almost 200 today, Jacques Chibois took his time. Today, La Bastide Saint-Antoine offers traditional Provencal cuisine in a unique Provencal garden atmosphere.
