Gault&Millau's review 2026

Between Toulouse and the Pyrenees, this former hotel has been converted into a gourmet restaurant run by Florent Cluzel (formerly of Goujon and Trama), and is making a name for itself in this small village. In the dining room, the dishes are masterful, and the €57 menu already shows the full extent of the chef's talent: tortellini of crab and green crab broth with crab mouillette, with a fine touch of finesse. Pyrenean trout cooked with binchotan leaves the flesh pearly with a deliciously iodized beurre blanc, cockles and fish roe. We continue with a winter dish, black pork pressé with five spices and a remarkable sauce. We finish with a trompe-l'oeil of yuzu meringue and an original association with coffee. Service is provided by a young but no less professional team. The sommelier has built up a cellar covering all the regions, with some fine finds.
