Gourmet Restaurant An institutional hotel in Martres-Tolosane, handed down for four generations, offering comfort, relaxation and a fine bistronomic table. At the helm is chef Florent Cluzel, who has worked with the likes of Goujon and Trama, defending a cuisine with multiple, well-dressed influences. The €57 menu is a good middle ground, with mackerel with seaweed salt, burnt onion nage and faux caviar, grilled red tuna, piperade and pommes allumettes, méchouia, Pyrenean lamb, fillet, tabbouleh, grilled rib, savory and tomato puff pastry, ratatouille glacée, garlic croquettes, a spice-roasted Solliès fig in a wild aniseed cloche, orange blossom ice cream. Well-stocked cellar.
