Chef's Restaurant Nestled in the heart of the Palais des Evêques, which, with its cathedral, forms a remarkable ensemble, the Carré de l'Ange has more to offer than just its enviable location and stunning views over the village. Whereas, in such surroundings, one might have expected to revisit Pyrenean culinary tradition, chef Paul Fontvieille has chosen the opposite, daring to serve roasted langoustines with Nantua sauce and Bigotte ventrêche chips, steamed omble-chevalier with tomato and sage, and peasant croustade with Roussillon apricots and mint-verbena ice cream. Attractive lunch menu at 25 euros outside school vacations.
