On the outskirts of Saint-Girons, Laurent Arrighi has settled in successfully, retaining the chef's hat he earned at the Hôtel de la Tour in Saint-Lizier. With a contemporary cuisine inspired by trends and a hint of terroir: tatin of endives with pear and comté and roquefort ice cream, roast monkfish with artichoke risotto and lobster sauce, duck breast with parmesan and basil and garlic confit cream. A good daily menu at €22, with pleasant desserts with evocative titles ("Tuerie aux pommes", "Explosion au chocolat"...).
