Gault&Millau's review 2025

An old-fashioned inn well known to lovers of classic dishes, set against the backdrop of the Château de Beauregard, overlooking the left bank of the Salat. This traditional, clean, unpretentious cuisine has nothing but virtues: calf's head with ravigote sauce, organic egg meurette, stuffed suckling pig cooked on a spit, beef chuck confit, Plantaurel duck chest to share, matured rib of beef... So many exemplary, hearty dishes that are a credit to French cuisine. The festivities end with millas flambéed in rum or giant profiterole. A connoisseur's cellar, with small IGP wines from Ariège, a wide choice at around €30 and some interesting cuvées (a "Romain Pauc" at €58).
