Gourmet Restaurant Dining at the Capitole? A tempting program that can rely on sure values. Like the faithful "Chez Gratien" brasserie, which has enough loyal Toulousans to inspire confidence. The menu has its principles, and evolves gently, adding a few trendy ideas - salmon gravlax, a vegetable wok - even if the essential remains traditional: the famous mimosa egg, snails, 5A andouillette, cassoulet, whole duck breast and potato flan. Desserts from the repertoire, suggestions for dishes of the day (brandade last time).
