Chef's Restaurant This institutional classic must of course be defended as the gastronomic star of the Capitole. Stéphane Tournié has been working here with seriousness and savoir-faire for almost twenty years. His four-course menu at €79 bears witness to this loyalty to the terroir and good manners, the short menu adapting with suggestions from day to day, keeping the fundamentals in beautiful emblematic plates: langoustines in carpaccio, sweetbreads on a tartare of langoustines in blanquette sauce, Suzette-style Marie-Louise pancakes. More affordable prices for a pleasant counter-side snack.
