Gourmet Restaurant An institution that runs smoothly, equal to itself, without any rough edges, but also without any coughing. Service is fluid, prompt, smiling and on top of its game, as are the kitchens, which don't purr but deliver a vast menu of modernized Occitan delights: onion soup, burrata pesto, cod barded with Iberian bacon, generous cassoulet, braised beef cheek cooked for 7 hours, rice pudding with salted butter caramel and pecan. The menu changes with each season, and the cellar is extensive, from Bordeaux to Languedoc, with a collection of Armagnacs, Mariage tea and cocktails.
