Chef's Restaurant The view from the top of the Galeries Lafayette is one of the best in Toulouse, a veritable spectacle with waves of red roofs and church towers reaching for the sky. On the kitchen side, Michel Sarran's menu is formidably efficient, with fine produce and good taste in the recipes, and a well-developed chic, contemporary brasserie style. Discover the sea bass and pink radish gravelax, the mushroom and black Bigorre pork risotto, light and well caramelized, or the black forest-style tartlet. The rest of the menu is full of options, including duck parmentier, conchiglionis stuffed with crab crumble, paella and poultry ballotine with butternut fricassee, chestnuts and mushroom broth. Impeccable service.
