Sponsored Gwendoline and Thibaut Baloche share their love of fine dining in the gentle setting of their restaurant. "A red from our producer, for example, reveals the complex flavors of beef cheeks," she says. We also salute their civic-minded positioning, illustrated by the call for local seasonal produce, the use of cloth napkins and the use of compost.
