A contemporary setting in this long-established house is also the vocation of this valiant Lion d'Or, which always aims for the top and knows how to evolve. This is also evident in the kitchen, thanks to the committed work of chef Thomas Busnoult, who elegantly blends Bajocian terroir with ideas from elsewhere, particularly the Far East: green asparagus tart, red shiso and umeboshi, filet of duckling in cocoa sauce, furikake and cocoa nibs, breaded shiitake and peas, strawberry and vanilla marmalade, brown sugar shortbread, basil and lime sorbet in a fine €41 menu. Excellent service, large, classic cellar.
