Gourmet Restaurant It's one of the city's hottest addresses, a confluence of ethical agriculture, sustainable cuisine and taste culture. Presided over by Anthony Orjollet, the place exudes a free and convivial spirit, a moment of sharing around compositions full of ideas, a fire-grilled leek, mayo, mullet bottarga, free-range egg and parsley, a steamed bao with Xemiania flour, oyster mushroom, mentsuyu, mayo and rayu, red tuna ventresca and char-grilled squid, orange wine sabayon, lacquered beef shank, potato purée and veal jus, and candied pear, rice pudding mousse, corn masa crumble. The address is also a cellar, grocery store and counter.
