Chef's Restaurant A sober, modern setting for a cuisine that resembles it, in the heart of the capital. Based on the theme of Parisian bistronomy of the 2000s - a product, an accompaniment, a condiment, a texture - this ever-renewed list reveals a highly appetizing contemporary universe: elderflower asparagus with kumquat hazelnuts, rabbit with fava beans and tarragon mushrooms, vol-au-vent with canut brains, soubise kale, poached egg with arugula...
