Gourmet Restaurant Opened in early 2024 by the same team as Baillotte (2 toques) and Narro (1 toque), Calice, headed by chef Chikuda Kazuma, focuses primarily on great bistro classics brought up to date and obviously tinged with Japanese influences: beef tartare, tarragon sabayon, apple and marrow, fish of the day (redfish on our visit) cooked with binchotan, fennel, fermented pear and wild garlic, before a gourmet version of crème brûlée rice pudding, with lime emulsion and pieces of mango roasted in thyme. Pleasant sidewalk terrace, tapas-style cuisine at dinner, relaxed service.
